yellow squash casserole, yum! believe it or not

5 lbs med yellow squash thickly sliced
2 eggs beaten
1c wholewheat breadcrumbs
1/2c parmesean cheese
1/2c butter melted
1/2c honey
2 tbsp chopped onoin
1/2 tsp salt
1/4 tsp pepper
cook squash with enough water to cover until tender, drain well, mash and mix rest of ingredients, spray casserole dish, cover with extra breadcrumbs, bake 350, 20 min, it really is good, i grow lots of squash, it uses it up well, enjoy

  2. Sounds really good. Bread crumbs, butter, and honey make almost everything yummy :) I'm gonna give it a try.

  3. YUMMY! Can't wait to try it. I love summer squash - wish I had a green thumb to grow my own. Maybe next year when the kids can do it for me, ummm I mean with me... hee hee...
